Zucchini and Corn Pie

What I love about food is the conversations it brings up with people. When my grandfather and his wife were visiting us recently we were talking about our love of all things pie. And she mentioned she had a great recipe for a zucchini and corn pie that she would send me. And send it she did… and it was a lovely pie! I made a few additions…. including pastry. I was being lazy and didnt want to make a side salad so I thought why not include some pastry with the recipe to fill us up a bit more (it worked) and I also added some cooked bacon to the mixture for the meatasaurus.

This has a beautiful sweet, yet fresh taste. I love zucchini so having that and the corn be a star in this pie was really great. If you make it as intended (without pastry) it is also quite a healthy dinner.

Zucchini and Corn Pie 


250g Zucchini – grated
130g can of Creamed Corn
A small red pepper – finely chopped
A small onion – finely chopped
Half a cup of grated Tasty Cheese
Half a cup of Self-Raising Flour
2 Tablespoons of Oil
2 eggs, slightly beaten.
A lightly greased 20cm Pie dish. 

Combine all ingredients in a large bowl, mix well. Pour the mixture into the pie dish. Bake in a moderate oven for about 45 minutes, or until set. Let stand for 5 minutes and then cut into wedges to serve.
